Banana Waffles!

What a perfect breakfast on a rainy Saturday morning. Yes, the recipe called for only one banana and I had a perfectly ripe banana waiting for this moment. I was kind of hungry but I didn’t know what to eat until I heard a thunder outside! “Banana Waffle!”, it screamed. I added everything into my Ninja (food processor/blender) and pushed the button! Grrrr Grrrr Grrr. Scrape sides, more Grrr Grrr, now it’s done! These tasted great and gave me the energy for lots of cleaning I have to do this weekend!
If you don’t have a waffle maker, you can make pancakes with this batter on a frying pan. I’m sure it’s good. You could add some small chocolate chips or chopped nuts in the batter. My family likes to eat with lots of syrup, my girlfriend Nancy calls it “syrup delivery system” soaking her pancakes with lots of syrup. I like to eat plain because of the crunchy texture on the crust.



Here are the ingredits:
1 Tablespoon Baking Powder
2 Teaspoon sugar
1/2 Teaspoon salt
1 Teaspoon ground cinnamon
1 ripe banana
1/3 cup butter – melted (I used 3oz, yes it’s little over 1/3 cup :) )
1 2/3 cup milk
2 eggs
1/4 Teaspoon Vanilla Extract
2 cups all purpose flour

Just mix this up – I put everything into my Ninja, pulsed several time, cleaned sides, then pulsed a few time more. I filled my waffle maker about 2/3 with the batter. I heard someone said, “Wow, something smells so good!”
